Atlantic salmon, selected from some of the finest producers in Scotland and the Shetland Isles are delivered fresh overnight to Andwell. Preparation, marinading and brining take place before the salmon is ready for poaching or smoking during the night.

Andwell has been ‘hot smoking’ salmon for many years:

“A friend of my family was one of the U.K’s leading supplier of smoked salmon based in Manchester. I visited him some 20 years ago just after he had had a disaster in his new kiln. The ‘cold’ smoked salmon had cooked; but the product he later called ‘Smythe’s Mistake’ was delicious. We bought the smoker and have been continually developing the range of ‘hot’ smoked salmon products ever since”.
